    Prep
    Preheat your oven to 180°C and line a large baking sheet with parchment paper or a silicone mat.

    In a large bowl, cream the softened butter, brown sugar, and white sugar together using a whisk or electric mixer until the mixture is pale and fluffy, about 2-3 minutes.

    Emulsify
    Add the egg and vanilla extract to the butter mixture. Beat on medium speed until fully combined and smooth.

    Dry Ingredients
    Sift in the flour, baking soda, and salt. Use a spatula to fold the dry ingredients into the wet ingredients until just combined - be careful not to overmix, as this can make the cookies tough.

    Gently stir in the chocolate chips by hand until they are evenly distributed throughout the dough.

    Divide the dough into 12 equal-sized balls (roughly 2 tablespoons each). Place them on the prepared baking sheet, leaving at least 2 inches of space between each ball to allow for spreading.

    Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft. They will firm up as they cool.

    Let the cookies sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
